*Otsu-type : There are two types of Shochu - Ko and Otsu. The standard type of shochu, Otsu, is made from mainly rice, sweet potatoes, rye, corn, or raw sugar, and is distilled in pot stills. The main ingredient in Ko-type shochu is molasses, and this type of Shochu is diluted with water.
